Ingredients
- 1 1/2 cup chickpeas, canned
- 2 cups mushrooms, chopped
- 3 cups vegetable stock
- 1/2 cup tomato puree
- 1 onion, red, large, chopped
- 1/3 cup feta cheese
- 3 tbs olive oil
- 2 garlic cloves, minced
- 1 tsp cumin
- 1 tsp paprika
- 3/4tsp salt
- 1 tsp pepper, black
Directions
- 1. Heat the olive oil in a saucepan and sauté the mushrooms with the onions for 5 minutes. Season with cumin, paprika, salt and pepper.
- 2. Add the chickpeas and garlic and cook for another minute. Add the tomatopuree and stock and simmer for 15-20 minutes.
- 3. Adjust the seasoning and serve hot with crumbled fetacheese.
