1. In a small sauce pan combine the olive oil with the mint, garlic and chili. Heat over a very low heat for 2-3 minutes. Remove from the heat and let it steep for five more minutes.
- 2. Transfer in a clean, airtight jar. Use as a cooking oil, as a dipping oil for your bread or as a finishing touch raw over salads, pasta or grilled meat, poultry, fish or vegetable.
