Mashed Carrots With Olive Oil

4 carrots, chopped
- 1 potato, medium, chopped
- 3 tbs lemon juice
3+1 tbsolive oil
1/3 tsp pepper,black
1 tsp salt
- 1. Bring a pot of salted water to a boil and cook the carrotsand potatoes for 15 minutes until tender.
2. Mash with a potato masher or with a fork and add 3 tbs of olive oil and the lemon juice.
3. Season with salt and pepper and serve hot drizzled with the remaining olive oil.
