Ingredients
- 1/2 cup melon syrup (recipe below)
- 1/3 cup gin
- 1/3 cup club soda
4 Cucumber slices
- ice to serve
1 cup water
1 cup sugar
2 cup melon, diced

For the melon syrup:
Directions
1. Make the syrup: Heat the olive oil in a saucepan. Sauté the melon dices for 3-4 minutes. Add the sugar and caramelize for 1-2 minutes. Add the water and simmer for 7-10 minutes. Process with a stick blender until smooth.
- 2. Make the drink: In a mixing glass combine the syrup with the gin and soda. Mix well.
3. Fill two serving glasses with ice and pour the drink over the ice. Garnish with cucumber slices and serve cold.
Recipe Note
A different, sophisticated take on a classic spritzer. This syrup is fantastic on ice cream as well. If you prefer a smoother consistency, strain the syrup through a cheesecloth and discard the remaining solids.
