1. Make the syrup: Heat the olive oil in a saucepan. Sauté the melon dices for 3-4 minutes. Add the sugar and caramelize for 1-2 minutes. Add the water and simmer for 7-10 minutes. Process with a stick blender until smooth.

3. Fill two serving glasses with ice and pour the drink over the ice. Garnish with cucumber slices and serve cold.
