Ingredients
4 cups of baby spinach
- 1cup beans, canned
- 1 cup chickpeas canned
- 1 cucumber, large, sliced
- 1/2 lime, juice only
- 1/4 cup feta cheese, crumbled
1 tbsp flaxseed

3+1 tbsp olive oil

1/2 tsp salt

1/4 tsp black pepper
Directions
Heat 1 tbsp of olive oil in a non-stick pan and sauté the beans and the chickpeas seasoning with salt and pepper, for 2-4 min.
In the meantime, mix the cucumber with the spinach and whisk the remaining olive oil with the lime juice to make a quick dressing.
Add the beans and chickpeas to the salad, drizzle with the dressing, and serve topped with crumbled feta cheese and flaxseed.
