Ingredients
- 1 cup quinoa
- 1 cucumber, large
- 1 avocado, ripe, large
- 5-6 radishes
- 1/2 cupolive oil
- 1 1emon, juice
- 1 tspsea salt
- 1/4 tsp black pepper
Directions
- 1. Bring a pot of salted water to a boil and cook the quinoa until tender, for about 20 minutes. Fluff with a fork.
- 2. Chop the cucumber, radishes and avocado. Mix with the quinoa in a large salad bowl.
- 3. Drizzle with lemonjuice and olive oil and season with salt and pepper. Serve at room temperature.
