- 1. Preheat the oven to 400°F.
- 2. Heat the broth in a saucepan and cook the potatoes for about 15 min.
- 3. Meanwhile, arrange the peppers, garlic and onions on a baking sheet and drizzle with olive oil
4. Season with salt and pepper. Roast for about 15 min.
- 5. Remove from the oven, cover for about 10 min and peel the skin off the peppers and garlic.
- 6. Transfer in a blender or food processor with the potatoes and process until smooth and creamy.
- 7. Return to the saucepan and simmer for 5 minutes. Season to taste and serve hot.
