Heat the olive oil in a heavy bottomed pan over low heat and scrape in the vanilla seeds. Chop and add the vanilla pods too. Let the olive oil get infused for 5 minutes and remove from the heat. Strain and add the strawberries. Toss to coat with the olive oil. Allow them to marinade for a minimum of 30 minutes.
- Place the gin and dry vermouth in a mixing glass. Add ice and stir for 30 seconds until chilled.
- Place 2-3 marinated strawberries into each martini glass and fill with the drink.
