Recipe-332-Dried Tomato Pesto & Pasta
This is an unusual kind of pesto that will redefine the way you cook pasta. Salty, earthy and satisfying it goes equally well with pasta, gnocchi or rice, it makes a tasty sandwich spread or dip and you can use it to spice up and enrich your soups, stews and casseroles. We are not adding salt as we find that the dried tomatoes and the parmesan cheese are salty enough on their own, but feel free to season to taste and adjust accordingly. Interesting idea: Add a spoonful to your hummus!
Process all the ingredients together in a blender or food processor to get a pesto. Add a little extra olive oil if needed to achieve a creamy consistency. Store in an airtight container for up to 3 months in the fridge and let it reach room temperature before you serve.
