Ingredients
4 cups rhubarb

1/4 cup olive oil
3 tbs honey
1/2 cup salt roasted nuts
1tsp cardamom seeds, crushed
1 cup Greek yoghurt or heavy cream
1 sprig thyme
4 Greek biscotti or your choice of hard cookies
Directions
Cut and discard the bottom and top of the rhubarb. Chop the rest in 1 inch pieces and heat the olive oil in a pan. Sauté for 3-4 minutes.
Add the honey and the cardamom seeds and simmer until they are soft.
Divide the compote in serving bowls with crushed biscotti, nuts, and serve with dollops of Greek yogurt or heavy cream, garnished with fresh thyme and a drop of olive oil.
