Ingredients
1 cup broccoli, cut into florets
1 cup ramen noodles
1 tbs parsley leaves to garnish
- 7 oz butternut squash, sliced 1 inch thick

2 tbs olive oil
- 2 tbs honey
- 2 tbs soy sauce
- 2 cups vegetable broth

2 tbs olive oil
- 1 garlic clove, minced
- 1/2 tsp ginger, minced

Directions
Caramelize the squash:
Heat the olive oil in a non-stick pan and sauté the squash slices for 3-4 minutes on each side. Add the honey and soy sauce to the skillet and toss to coat the slices. Simmer to reduce into a thick glossy paste to caramelize the squash.
Make the broth:
Heat the olive oil in a sauce pan and sauté the garlic with the ginger for 2-3 minutes. Season with salt and pepper and add the broth. Simmer for 5 minutes.
Bring a pot of salted water to a boil and cook the broccoli florets for 5 minutes. Remove and cook the ramen noodles in the same water. Strain and set aside.
Add half the amount of the caramelized squash into the broth and process with a stick blender until smooth and creamy.
Assemble the soup:
Divide the broth into serving bowls. Add the ramen and broccoli. Top with the remaining squash slices and sprinkle with parsley leaves, Serve hot.
