Recipe-261- Creamy Smoked Steak and Potato Soup

Our richly-flavored soup combines slowly simmered potatoes with hearty chunks of smoky steak for an unforgettable flavor experience. Whether it's chilly outside or you're just looking to warm up with something delicious and filling, this smokey classic will not disappoint!
- 2 cups potatoes, diced
- 1 cup smoked steak, diced
- 3 cups chicken broth
- 1 cup sour cream
- 1 garlic glove, minced
- 1/4 cup spring onion, chopped
4 tbs olive oil
1/2 tsp salt
1/4 tsp black pepper
Heat the olive oil in a sauce pan and sauté the potatoes for 5-7 minutes. Add the steak cubes and sauté for 5 more minutes, adding the garlic the last minute.
Season with salt and pepper and add the sour cream and broth. Simmer for 20 minutes.
- Remove the steak chunks along with a few potato chunks from the saucepan and process the remaining soup with a stick blender to get a creamy and thick consistency. Return the potato chunks and the steak pieces to the saucepan.
- Serve hot, garnished with spring onions.
