Recipe-232-Olive Oil-Spinach Mini Quiche
Everyone loves a good quiche! This is a healthier variation of the classic quiche as we are cutting down on the cream and add olive oil to make the most of these healthy fats. We are also taking out the crust and rest assured, you won’t miss it at all, as these mini, single serving variations are packed with all the flavor! You can use goat cheese, ricotta or crumbled feta cheese for a rich tangy taste with a piquant acidic tartness.
Preheat the oven to 350° F. Line a muffin tray with paper muffin liners.
In a large mixing bowl whisk the eggs with the cream and olive oil seasoning with nutmeg, salt and pepper. Add the spinach, goat cheese, dill and minced garlic to the mix and stir to distribute all the ingredients evenly.
- Pour into the lined muffin tin and bake for 20- 25 minutes, until they puff up and form a golden brown crust. Serve warm.
