1 cup all-purpose flour
1 1/2 cups whole milk, room temperature
4 large eggs, room temperature
2 tbs cocoa powder
1 tbs granulated sugar
1/4 cup olive oil
1/4 tsp salt
1 cup whipping cream
3⁄4 cup icing sugar
1⁄3 cup olive oil
3 tablespoons cocoa powder, unsweetened
1/4 teaspoon salt
For the filling
In a mixing bowl combine the flour with the cocoa powder, sugar and salt. In another bowl whisk together the eggs with the milk and 3/4 of the amount of the olive oil.
Gradually incorporate the dry ingredients into the wet ingredients to make a batter. Let the batter rest for 5-10 minutes.
Heat a non-stick, wide pan and brush with a bit of the remaining olive oil.
Pour dollops of the batter in to make crepes, swirling around to cover all the surface evenly. Cook for a minute on each side. Repeat the same process.
In the meantime make the mousse: With electric mixer, mix the whipping cream with the olive oil, cocoa powder, sugar and salt, until it holds firm peaks.
Fill the crepes with the mousse and serve.
