Recipe-218 Slow Roasted Tomatoes
There’s something nostalgic about slow roasted tomatoes preserved in olive oil. Maybe it’s the epitome of sow living and mindfulness in a jar. Simple, high quality ingredients, an uncomplicated roasting technique and there you have it: a classic, comforting appetizer or side dish that goes so well with toasted bread, feta cheese and a glass of sharp, white wine.
Preheat the oven to 300°F. Place a rack in the middle of the oven and line a baking pan with parchment paper.
- Roast for 50-60 minutes until very soft and slightly golden.
Place in a jar and cover with the remaining olive oil.
- Serve with bread and feta cheese.
