- 6 oz chicken breast, sliced into 1" thick slices
- 4 oz mozzarella, torn in large pieces
- 2 tomatoes, large
- 1/4 baguette, diced
- 1/4 cup basil leaves
4 tbs olive oil plus extra to serve
1/2 tsp salt
1⁄4 tsp pepper
Heat the olive oil in a pan and sauté the chicken fillets for 3-4 minutes on each side, seasoning with a pinch of salt and pepper.
