- 3 cups spinach, fresh
- 3 cups arugula
- 2 pc mandarin oranges, cut in wedges
- 1 cup walnuts
- 1/4 cup cranberries, dried
- 2 tbs balsamic vinegar
4 tbs olive oil
- 1 tbs honey
- 2 tsp poppy seeds
- 1 tsp Dijon mustard
1/2 tsp salt
1/4 tsp black pepper
Heat 1 tbs of the olive oil in a pan and toast the walnuts for 2 minutes, tossing and seasoning with a pinch of salt.
In the meantime make the dressing by whisking together the remaining olive oil with the vinegar, honey, poppy seeds, mustard, salt and black pepper. Set aside.
- Mix the spinach with the arugula and place in a salad bowl. Top with the mandarin orange segments, cranberries and toasted walnuts.
- Drizzle with the dressing and serve.
