Ingredients
- 4 cups baby spinach
- 1 persimmon fruit, large
- 1 apple, thinly sliced into half-rounds
- 1/4 cup feta cheese, crumbled
- 2 tablespoons pomegranate arils

- 1 tbs Dijon mustard

1/4 tsp black pepper
Directions
Whisk the olive oil with the mustard to make a simple dressing.
- Toss the spinach in a salad bowl and coat with the dressing.
- Top with slices of persimmon, apple, the pomegranate arils and the crumbled feta cheese and serve at room temperature.
