Preheat the oven to 350°F. Arrange the garlic with the thyme, rosemary, oregano and the bay leaf in a baking dish and drizzle with 2 tbs of olive oil. Cover with foil and bake for 30 minutes until the garlic is tender inside.
Transfer in a jar and cover with the remaining olive oil.
Crumble the goat cheese in a bowl and top with 3-4 tbs. of the infused olive oil. Optionally, mush and add a garlic clove or two the cheese and mix well. Serve at room temperature.
Preserve the remaining infused olive oil in an air tight jar for up to 10 days.
