- 3/4 cup wheat
- 1/4 cup feta cheese
- 1-2 carrots, cut lengthwise
- 1 onion, red, sliced
- 1/2 cucumber, sliced
- 1 pomegranate, arils
- 1 lemon, juice
- 1 tbs honey
- 1 tsp thyme, dried
- 1 tsp chili powder
1/4 cup olive oil
1 tsp salt
1/2 tsp black pepper
Bring a pot of salted water to a boil and cook the wheat until tender.
Heat 1-2 tbs of the olive oil in a pan and sauté the carrots for 3-4 min on each side until tender. Season with salt.
In the meantime make the dressing by whisking together the remaining olive oil with the lemon juice, honey, chili and thyme. Set aside.
Place the cooked wheat on a serving plate with the carrots, cucumbers, onions and pomegranate arils. Season with salt and pepper to taste.
- Drizzle with the dressing and top with crumbled feta cheese. Serve warm.
