Make the syrup:
In a small saucepan, combine the honey, water and olive oil and bring to a simmer. Remove from the heat, add the rosemary sprigs and let them steep for 20-30 minutes.
Make the drink:
In two serving glasses of your choice, add a few ice cubes and divide the pomegranate juice, lemon juice gin and syrup. Stir well.
- Top with soda water and garnish with rosemary sprigs and pomegranate arils.
