Briam is the essence of Greek summer. It’s a simple vegetable bake, served with feta cheese, Greek salad and bread. Potatoes, onions, eggplant, zucchinis and peppers are cooked to perfection with extra virgin olive oil, and tomato sauce which makes a finger-licking dipping sauce. This is exactly why you’ll need the freshly baked crusty bread.
Preheat the oven to 390°F.
- Slice the potatoes, zucchinis, onions and eggplants into thin circles. Chop the peppers into slices to match the circles.
- Arrange the slices in a baking pan and bake with a lid (or tin foil) for about 20 minutes until all the vegetables are cooked through.
- Remove the lid or the tin foil and bake for 20 more minutes until golden brown. Serve warm.
