Ingredients
4-5 large bell peppers
- 2/3 cup bulgur
- 2 large tomatoes, diced
- 1 red onion, chopped
- 2/3 cup parsley, chopped

6 tablespoons extra virgin olive oil

½ teaspoon black pepper
- 1 cup water, lukewarm
Directions
Preheat the oven to 390°F.
- Halve the peppers and scoop out the seeds. Arrange on a baking pan.
In a mixing bowl combine the bulgur with the onions, tomatoes and parsley. Season with salt and pepper. Add the olive oil and water and mix well.
- Divide the mixture into the prepared peppers and bake for 20-30 minutes until the bulgur is cooked through.
- Serve hot.
