500g shell pasta
- 2 large onions
- 2 red peppers
- 1 tablespoon honey
- 1 teaspoon brown sugar
1 tablespoon balsamic vinegar
2 tablespoon extra-virgin olive oil plus 1 tablespoon for the pasta
- ½ teaspoon chilli powder
1 teaspoon salt
Cook the pasta according to packaging instructions.
In the meantime, slice the onions and the red peppers. Heat the olive oil in a large, wide pan and sauté for 3-4 minutes. Add the brown sugar and honey and allow simmering until they turn golden brown and slightly crispy. Pour in the balsamic vinegar and stir to reduce into a thick glaze.
Use one tablespoon of extra virgin olive oil to coat the pasta while they are still hot.
