Recipe-109-Mushroom Basil Olive Oil Orzo Casserole
Orzo is probably the most understated type of pasta, or "pastina" — a category of tiny pasta shapes commonly used for soups. This casserole makes the most of this lovely Mediterranean treat in a delicious one-pot recipe. The mushrooms are low in calories and fat, yet they are packed with a dozen of minerals and vitamins, including copper, potassium, magnesium, zinc and a number of B vitamins such as folate, making this a super healthy dinner that tastes as good as it looks!
Preheat the oven to 360°F.
- Mix well to combine the flavours and transfer into an oven-proof dish. If you are using a cast iron or oven proof pan you can simply transfer that straight to the oven.
- Bake for 20 minutes, adding water and stirring when needed until the orzo absorbs all the liquids and is cooked through.
Serve warm drizzled with extra olive oil and basil.
