2 cups orzo
- 2 cups mushroom, sliced
- 1 cup tomato puree
- 2-3 cups water, boiling hot
- 1 large onion, chopped
- 2 cloves garlic, minced
¼ cup olive oil
- 1 tablespoon basil, dried
½ teaspoon salt
¼ teaspoon black pepper
Preheat the oven to 360°F.
Heat the oil in a deep pan and sauté the mushrooms with the onions for 4-5 minutes, adding the garlic last. Pour in the tomato puree, add the orzo and season with basil salt and pepper.
Mix well to combine the flavors and transfer into an oven-proof dish. If you are using a cast iron or oven proof pan you can simply transfer that straight to the oven.
- Bake for 20 minutes, adding water and stirring when needed until the orzo absorbs all the liquids and is cooked through.
Serve warm drizzled with extra olive oil and basil.
