Recipe-04-Greek Snanakorizo with Brown Rice. (greek spinach risotto)
This is a healthified take on the all-time favorite Greek classic. Brown rice, spinach, onion and garlic make up a delicious yet very simple meal, perfect for midweek dinners. When cooking we are treating it like a typical risotto, but the texture is crispier and les creamy due to the brown rice. Allow it to rest for a few minutes before serving as this helps to absorb all the flavours! It tastes even better the second day so don’t hesitate to double the portions!
Chop the onion and the spinach and mince the garlic.
Heat half the amount of oil in a sauce pan and sauté the onion until golden, about 3-4 minutes. Add the garlic and cook for an extra minute, seasoning with salt and pepper. Add the chopped spinach and allow to wilt down for 1-2 minutes.
- Add the rice to the pan, mix well to combine the flavours and gradually add water, a scoop at a time adding more when each scoop has been absorbed, until the rice is cooked through and tender.
Serve warm topped with sunflower seeds and drizzled with the remaining raw olive oil.
