Quintessentially Greek, simple, unpretentious and gracefully rustic! Greek salad is a must when tomatoes and cucumbers are in season! Making wide use of all seasonal produce and high quality, extra virgin olive oil this is the equivalent of summer in a bowl. Some people add vinegar or lemon juice but if you are using a good olive oil you can omit that as the juice of the tomatoes will blend perfectly with the oil to make the perfect dressing. Dip your bread in the oil like a true Greek! We call it ‘vouta’ loosely translated to ‘dipping’ and as you will find, it’s one of life’s simple joys!
