Ingredients
- 3 cups chickpeas, canned
- 3 cups vegetable broth
- 1/3 cup peanut butter
- 4 tbs Greek yogurt
- 1 onion, chopped
- 3 garlic cloves, minced
- 4+2 tbsolive oil
- 3 tbs lemon juice
- 1 tsp salt
- 1/2 tsp pepper, black
- 1/2 tsp cumin, ground
Directions
- 1. Heat 4tbs of olive oilin a nonstick pan over high heat. Sauté the chickpeas with the onions for 4-5 minutes, add the garlic and cook for another minute.
- 2. Add the broth and peanutbutter, season with salt, cumin and pepper. Simmer for 10 minutes.
- 3. Transfer into a blender and process until smooth. Add the lemonjuice.
- 4. Return to the saucepan and cook for 5 more minutes.
- 5. Serve hot with dollops of Greekyogurt and a swirl of olive oil.
