Banana Apple Oat Cookies

Ingredients:

  • 1 apple, red, grated
  • 1 banana, mashed
  • 2 eggs
  • 1 1/2 cup oats
  • 1 1/2 cup Greek yogurt
  • 3 tbs raisins
  • 4 tbs olive oil
  • 2 tsp cinnamon
  • 2 tbs peanut butter
  • 1/4 tsp sea salt

 

Directions:

  1. Preheat the oven to 370°F and line a baking pan with parchment paper.
  2. In a mixing bowl combine the grated apple with the banana, eggs, oats, yogurt, raisins, olive oil, cinnamon, salt and baking powder. Stir to combine but don't over mix.
  3. Shape into bitesize balls and arrange on the baking pan leaving enough room between them to expand.
  4. Bake for 15 minutes until slightly golden and allow to cool on a rack. Serve at room temperature.
