Ingredients:
- 1 apple, red, grated
- 1 banana, mashed
- 2 eggs
- 1 1/2 cup oats
- 1 1/2 cup Greek yogurt
- 3 tbs raisins
- 4 tbs olive oil
- 2 tsp cinnamon
- 2 tbs peanut butter
- 1/4 tsp sea salt
Directions:
- Preheat the oven to 370°F and line a baking pan with parchment paper.
- In a mixing bowl combine the grated apple with the banana, eggs, oats, yogurt, raisins, olive oil, cinnamon, salt and baking powder. Stir to combine but don't over mix.
- Shape into bitesize balls and arrange on the baking pan leaving enough room between them to expand.
- Bake for 15 minutes until slightly golden and allow to cool on a rack. Serve at room temperature.
