Ingredients:
- 1 avocado
- 1/2 cup walnuts
- 1/3 cup pecorino cheese, grated
- 1 garlic clove
- 1/2 cup olive oil
- 2 tbs lime juice
- 1/2 tsp salt
- 1/4 tsp pepper
Directions:
- Combine the avocado with the walnuts, pecorino, garlic, olive oil, lime juice in a blender until smooth.
- Season with salt and pepper and serve at room temperature or store in an airtight jar with an extra tablespoon of olive oil on top to preserve its vibrant green color.
Notes:
This pesto takes minutes to come together in a blender and it pairs wonderfully with pasta or bread.
