Ingredients
- 3-4 carrots, large, grated
- 1/3 cup red lentils
- 2 cups vegetable broth
- 2 cups water
- 1 onion, red, finely chopped
- 2 cloves garlic, minced
- 1 tsp honey

1⁄2 tsp salt
- 1 tsp paprika

1/2 tsp black pepper
- 2 tbs almond flakes, optional, to garnish
Directions
Heat the olive oil in a deep saucepan and sauté the grated carrots with the onions for 2-3 minutes, then add the garlic to the sauce pan and stir.
Add the lentils to the saucepan, season with salt, paprika and pepper and pour in the honey.
- Stir to combine the flavors and add the broth and water.
- Simmer for 15 min until the lentils have softened, then process with a stick blender until smooth.
Serve hot with a swirl of olive oil and almond flakes.
