- 2 eggplants, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup mozzarella cheese, sliced
- 3 cloved garlic, sliced
- 2 tbs basil, leaves
1 cup olive oil
2 tbs balsamic vinegar
1/2 tsp salt
1/4 tsp black pepper
Heat the olive oil, in a pan and fry the eggplant slices for 1-2 minutes on each side. Season with salt and pepper and arrange on a serving plate.
- Fry the garlic slices for 20-30 seconds in the same pan, until golden brown.
- Top the eggplant slices with the cherry tomatoes and the garlic.
Season with salt and pepper to taste, add the mozzarella slices and top with basil leaves.
- Drizzle with balsamic vinegar and serve warm.
