Ingredients
5 carrots
- 2 large potatoes
- 2 cloves garlic
- 1 onion
- ¾ teaspoon ginger, grated

2 tablespoons olive oil, plus extra to garnish
- 4-5 cups water
- ½ teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper
Directions
Peel and thinly chop the potatoes, carrots and onion.
Heat the olive oil in a sauce pan and sauté the potatoes with the carrots and onion seasoning with salt, paprika and black pepper for 5-7 minutes.
- Mince the garlic and add to the pan with the grated ginger. Stir and cook for 2-3 more minutes allowing the flavors to unfold.
- Gradually add the water and bring to a gentle simmer for 15-20 minutes.
- Using a stick blender blend the soup to get a velvety consistency. Add a little more water if needed.
Serve warm drizzled with extra virgin olive oil.
