How about a simple and healthy soup for supper? Full of cozy fall flavors, comforting and filling! We began making variations of this when the weather got colder and this one stood the test of time. As a starter, a quick lunch or a midweek dinner while watching your fave TV series, this is a soup that will reward you for heading to the kitchen instead of ordering take away. Less heavy than a classic creamy soup but somehow even better! Maybe it’s the olive oil drizzled on top that is making all the difference!
Peel and thinly chop the potatoes, carrots and onion.
- Mince the garlic and add to the pan with the grated ginger. Stir and cook for 2-3 more minutes allowing the flavors to unfold.
- Gradually add the water and bring to a gentle simmer for 15-20 minutes.
- Using a stick blender blend the soup to get a velvety consistency. Add a little more water if needed.
Serve warm drizzled with extra virgin olive oil.
