We rarely ever follow food trends but this one got us all excited. Grilled watermelon might be the ‘it’ recipe treading on Pinterest now but Greek Yayas and Theias have been enjoying this simple recipe since forever. Or at least different variations of the recipe. Ours is a scrumptious, modern version with feta cheese, another Greek staple, corn, red peppers, mint and onions. Give it a go and let us know what you think.
Preheat a grill to high heat.
- In a mixing bowl combine the feta cheese with the diced onions, corn and red pepper. Drizzle with a bit of lemon juice and set aside.
Brush the watermelon wedges with the olive oil and grill under the preheated grill for 2 to 3 minutes per side or until golden char marks form.
Top with the feta cheese mixture, drizzle with the remaining olive oil and serve warm or cold with lemon wedges.
